What to cook every day during Shravan, especially when you’re avoiding non-veg? 🤔

Today, I’m sharing a simple and delicious traditional recipe called Urad Methi. It’s a perfect vegetarian dish that goes amazingly well with hot steamed rice. You can also enjoy it as a side dish.

And the best part? It’s quick to make and doesn’t require any oil while cooking!

First, in a pan, dry roast some coriander seeds and Byadgi red chillies. Then add a little fenugreek seeds, one teaspoon of rice, and some urad dal. Roast everything nicely until aromatic, then keep it aside to cool.

Meanwhile, in another pan, add chopped raw mango pieces. I also like adding a few pieces of potato, so I’ve added that too. Add a little jaggery and some water, and let it cook until the mango becomes nice and soft.

By now, our roasted spices have cooled down. Add them to fresh coconut and grind everything together. Make sure the masala is slightly thick and not too watery.

Once the raw mango is cooked, add this freshly ground masala to it. Add a little water, turmeric, red chilli powder and salt, and mix everything well.

Let it simmer nicely until the masala is cooked.

One important thing to remember—because we have added rice, this dish tends to thicken as it cooks. So keep checking it in between and add a little water whenever required. The consistency should be medium-thick, which makes it perfect to mix with rice.

Finally, let’s give it a delicious tempering!

Heat a little oil and add mustard seeds, hing, curry leaves and urad dal. You can also add some Byadgi chilli if you have it. I didn’t have any available, so I skipped it.

Once the tempering becomes aromatic, pour it over the Urad Methi.

And that’s it! Our delicious, traditional Urad Methi is ready. ❤️
