Tomato chutney🍅✨️
A simple, flavourpacked chutney
Ingredients:
4-5 medium-sized tomatoes (chopped)
1 large onion (sliced or chopped)
7-8 garlic cloves
5 to 6 dried red byadgi chillies (not so spicy but gives a beautiful colour)
1 red chilli (spicy one)
1 spn jeera
Curry leaves- 7-8
Turmeric powder- ½ spn
1½ -2 tbspns of oil
Salt to taste
Half a teaspoon of jaggery or sugar( optional)
Small tamarind piece (for tangy taste optional)
*For tempering/tadka*:
1 spn oil
Mustard seeds 1 spn
Urad dal – 1 spn
Curry leaves 4-5
Red chillies – 1 byadgi chilli
broken into pieces
Hing powder – ¼ spn
Recipe
Heat ( 1½- 2 tbspns) oil in a heavy bottomed pan.Add cumin seeds, when they pop up add garlic cloves, dried red chillies, curry leaves, turmeric powder and saute for a few seconds.Now add the chopped onion and fry until it changes its colour light pink.Then add sliced tomatoes ,saute it for 2-3 minutes. Cook them covered until the tomatoes become soft and the oil separates. If you feel it is dry u can splash some water.) Add salt and jaggery ( optional). Add a piece of tamarind if you want a tangy taste.
Turn off the flame and let the mixture cool completely.
Grind the mixture in a mixer without water into a smooth paste. Check the salt. Transfer the chutney to a serving bowl before tempering.
*For tempering*/tadka : heat the oil in a small pan and add mustard seeds.When they splutter add urad dal, fry a little, add red chilli pieces and curry leaves.Finally add hing (asafoetida) powder.
Pour this tempering over the prepared tomato chutney.
Delicious tomato chutney is ready to serve with hot appos, dosas, idlis or as a side dish with meals.
