👩🍳 STEP-BY-STEP METHOD
Step 1: Prepare the rice
Wash the basmati rice thoroughly and soak it for 10 minutes.
Step 2: Prepare the potatoes
Wash the small potatoes and prick them with a fork so the marinade and spices can penetrate.
Step 3: Marinate the potatoes
Combine the potatoes with curd, ginger-green chilli paste, salt, turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala and biryani masala. Add fresh coriander and mint leaves. Mix everything well and let the potatoes marinate.
Step 4: Cook the biryani rice
Bring water to a boil with whole garam masala, lemon juice, salt and a little ghee. Add the soaked rice and cook until approximately 80% done. Drain and keep aside.
Step 5: Prepare the dum aloo
Heat ghee in a kadhai. Add whole garam masala and red chilli powder, followed by the marinated potatoes. Add birista and cook until the potatoes are tender and coated with the aromatic masala.
Step 6: Layer the biryani
Spread the cooked potatoes in a heavy-bottomed pot. Add a layer of partially cooked rice. Sprinkle birista, fresh mint leaves and coriander leaves over the rice. Drizzle a little ghee.
Step 7: Dum cook the biryani
Cover the pot tightly and cook on low heat for approximately 15 minutes. Place a tawa or heat diffuser under the pot to help prevent the biryani from burning.
Step 8: Serve and enjoy!
Gently fluff the layers and serve your delicious Kolkata-style Veg Aloo Dum Biryani hot. ❤️
