🍈 KATHAL PREPARATION:
– Raw kathal (jackfruit) – 1 kg
– Lemon juice – for preventing stickiness & blackening
– Water – for boiling
– Salt & turmeric – for boiling

🥘 KATHAL MARINATION:
– Fresh curd (yogurt) – 1 cup
– Kashmiri red chili powder – 1 tbsp
– Coriander powder – 1 tbsp
– Cumin powder – 1 tsp
– Turmeric powder – ½ tsp
– Garam masala – 1 tsp
– Salt – as per taste
– Asafoetida (hing) – 1 pinch
– Ghee – 1 tbsp

🍚 RICE:
– Basmati rice (soaked) – 2 cups
– Water – as needed
– Salt – 1 tsp
– Oil – 1 tbsp
– Bay leaves – 2
– Cloves – 4–5
– Green cardamom – 3–4
– Black peppercorns – 6–8
– Cinnamon stick – 2 small pieces

🧅 FRIED ONIONS & GRAVY:
– Onions (sliced, for fried onions) – 3 medium
– Onion (roughly chopped) – 1 medium
– Tomatoes – 2 medium
– Ginger-garlic paste – 1½ tbsp
– Oil – 4–5 tbsp
– Ghee – 1–2 tbsp
– Cumin seeds – 1 tsp

🌿 LAYERING & DUM:
– Fresh mint leaves – ½ cup
– Green chilies (slit) – 2–3
– Ginger juliennes – 1 tbsp
– Saffron milk – 2–3 tbsp
– Orange food color (optional) – a few drops
– Fried onions
– Desi ghee

📝 STEP-BY-STEP RECIPE:

KATHAL PREPARATION:
1. Choose fresh raw kathal with less seeds
2. Rub knife with lemon to prevent stickiness
3. Remove peel and cut into small pieces (1 kg)
4. Soak pieces in lemon water for 5 minutes (prevents blackening)
5. Pressure cook with water, salt & turmeric for 3 whistles (90% cooked)
6. Drain and let cool

MARINATION (CRITICAL STEP):
1. Transfer boiled kathal to large bowl
2. Add fresh curd, all spices (Kashmiri chili, coriander powder, cumin powder, salt, red chili, turmeric, garam masala, hing)
3. Add ghee and mix well
4. Cover and marinate for 15 minutes (this makes masala penetrate deeply!)

RICE PREPARATION:
1. Soak basmati rice beforehand
2. Boil water with salt, oil, and whole spices (bay leaves, cloves, cardamom, black pepper, cinnamon)
3. Add soaked rice, cook till 80% done (very important for biryani!)
4. Drain and set aside

COOKING KATHAL:
1. Heat oil in large kadhai
2. Fry sliced onions till golden brown and crispy – set aside
3. In same kadhai, add desi ghee
4. Add cumin seeds, let crackle
5. Add ginger-garlic paste, sauté well
6. Add roughly chopped onions and tomatoes, cook 2-3 minutes
7. Add marinated kathal, mix well
8. Cover and cook 5-7 minutes till juicy and flavorful

LAYERING (Restaurant Style):
1. Remove some kathal separately
2. In remaining kathal, add fried onions
3. Add first layer of cooked rice
4. Top with green chili, ginger, fried onions, mint, garam masala
5. Add remaining kathal
6. Create 2 layers similarly
7. Top layer: tomato pieces, desi ghee, saffron milk, orange color (optional)

DUM COOKING:
1. Cover lid tightly, seal edges with foil
2. Cook on medium flame for 10 minutes
3. Turn off gas, let rest for 10 more minutes
4. Open lid carefully
