The combination of savory Gaare made from urad dal and sweet Umbari made from rice, jaggery, coconut, and banana has been a cherished part of Konkani culinary heritage for generations.
INGREDIENTS:
FOR GAARE (Savory Fritters)
– ½ cup Split Black Gram (Urad Dal)
– 1 tsp Cumin Seeds (Jeere)
– ½ tsp Turmeric Powder
– Salt to taste
– Oil for deep frying
– Water as needed for soaking and grinding
FOR UMBARI (Sweet Fritters):
– ½ cup Dosa Rice (Polye Thandulu)
-½ cup Grated Coconut
– ½ cup Grated Jaggery
– 1 Ripe Banana
– 1 tsp Cumin Seeds (Jeere)
– Oil for deep frying
– Water as needed for soaking and grinding
