Batate Upkari (Potato Stir Fry)
Ingredients:
2 tbsp oil
1 tsp mustard seeds
2-3 dried red chillies
3-4 potatoes, peeled and cubed
Salt to taste
½ tsp hing (asafoetida) mixed with 2 tbsp water
1½ cup water (or as needed)
½/-½ cup freshly grated coconut
Method:
Heat oil in a pan and add mustard seeds. Let them splutter. Add the dried red chillies and sauté for a few seconds.
Add the cubed potatoes and salt. Mix well.
Pour in the diluted hing and water. Cover and cook until the potatoes are soft.
Once the water has evaporated and the potatoes are cooked, add the grated coconut.
Mix gently and cook for another minute. Serve hot with rice, dosa, chapati, or as a side dish.
