Khotto/ Kadubu❤️A delicious idli made in jackfruit leaves cones/tiny baskets woven with toothpicks/twigs or dried sticks
Ingredients:
Rice : 2 cups
Urad dal : 1 cup
Methi seeds 7-8
Salt to taste
Jackfruit leaves cones/ baskets
( washed and cleaned)

Preparing Dough
Soak rice and urad dal( dal with methi seeds) separately for 6-7 hrs
Drain the water and grind both rice and urad dal in a grinder separately .The batter should not be too thin or thick.It should be semi thick.
Take a big vessel to put dal and rice batter. Add salt and Mix well.Close the lid
Keep this batter for fermenting for 7-8 hours.
After resting it, gently stir the batter.
Fill the jackfruit basket by folding one of the four leaves with the batter only halfway, not upto the brim as khottos will puff up when steamed.
Now bring water to a boil in a pedaavan or idli steamer.
Keep the filled jackfruit baskets/cones one by one on the steamer rack( pedavan chaalni)
Steam for 20 mins.Check the khotto with a needle , and see that the batter does not stick to the needle and comes out clean. After steaming, open the lid of the steamer a bit for the steam to escape. You can smell the aroma of the leaves..And ta-da! your Khottos are ready!
When the khotto cools a little, remove the toothpicks/twigs and open/ peel the leaf cone/basket and serve.
Drizzle some coconut oil on khotto and serve the tasty, aromatic khottos with coconut chutney or sambar

1.You have to soak Rice and udad dal with methi seeds in the afternoon to grind it in the evening and keep it fermenting for 7-8 hours overnight to have khottos for breakfast next morning
Methi seeds help in good fermentation and makes the khottos lighter and softer.If available, Grinder is a better option than mixer as it also helps to make softer khottos.
2.Making jackfruit leaf cones/ baskets
Prepare the jackfruit leaves before soaking the rice and urad dal.You have to gather four leaves together to form a round bowl and prick it with a toothpick/twig or a thin stick to make firm so that it does not come out when the idli batter is poured in.
Nowadays, readymade khotto baskets are available in nearby Mangalore stores.
