Ingredients
Oil – 4 tsp
Ghee – 5 tsp
Bay Leaf – 1
Star Anise – 1
Cardamom – 2
Cinnamon Sticks – 2
Cloves – 2
Black Stone Flower (Kalpasi) – A few
Onion, chopped – 2
Tomato, chopped – 2
Green Chilli – 1
Carrot & Beans, chopped – 1 bowl
Soya Chunks (Meal Maker) – 1 small bowl
Red Chilli Powder – ¼ tsp
Garam Masala – 1½ pinches
Turmeric Powder – 2 pinches
Water – 1¼ cups
Milk – 15 ml
Fried Bread Pieces – 4–5 small pieces
Lemon Wedges – ½ lemon
Mint Leaves – A few
Salt – To taste
Ginger, Garlic & Green Chilli Paste – As required
Basmati Rice – 1 bowl
Fried Onions – A few
Method of Cooking
1.Heat oil and ghee in a thick-bottomed pot.
2.Saute whole spices until fragrant.
3.Add onions, green chilli, and cook until golden brown.
4.Stir in crushed ginger & garlic, then tomatoes.
5.Add carrots, beans, and soaked soya chunks.
6.Mix in chilli powder, turmeric, and a pinch of garam masala.
7.Pour in water, add lemon juice and a little milk.
8.Add soaked basmati rice and cook until nearly done.
9.Top with mint leaves and ghee, cover, and cook on dum for 10–15 minutes.
10.Garnish with fried onions and serve hot with raita.
