Phova- poha chutney beaten/ flattened rice flakes chutney/Phoa Upkari✨️❤️
Ingredients :
UltraThin poha – 2 cups
Fresh grated coconut — 2 cups
Dried red chilles – 3-4 fried in little oil
Cumin seeds ( jeera) 1 tspn
Coriander seeds – 1 tspn
Jaggery – a small piece or little powder
Tamarind – a small quantity
Salt to taste
For tempering
Oil – 1 tbspn
Mustard seeds- 1 tspn
Curry leaves – 7-8 leaves
Hing ( optional)
Recipe:
First Crush fried red chillies, coriander seeds, jeera, salt together in mortar and pestle or in a wooden bowl ( kolmbi in konkani) with a stone Then add jaggery and tamarind and lastly add grated fresh coconut giving it a light pound so that it absorbs the masala ( spices) mixture and gives a coarse texture.
Now take thin poha in a large bowl.Pour the prepared chutney (masala) mixture from the mortar over the poha.Mix the chutney and poha gently with your hands, so that the becomes soft and gives retains the whole and thin texture of phovu..Keep aside..
Tempering/Tadka (phann):
Heat 1 tbspn of oil in a small tadka pan. Add mustard seeds, once they splutter, add the curry leaves and hing (optional)
Our soft and tasty phova/ poha chutney is ready.
Serve it immediately for a better taste. You can add a handful of crunchy sev while serving. Banana is served as a combo with poha chutney
Note :
You can also grind the ingredients in a mixer( pulse mode) to a coarse powder instead of crushing it in mortar and pestle
Phova chutney also tastes good with combination of chana usli or batanya usli❤️
