Ingredients
1 No – Cauliflower florets
3 Tbsp – Oil
2 No – Bay leaf
1 Inch – Cinnamon stick
4 No – Green cardamom
8 No – Black peppercorns
1 Tsp – Cumin seeds
3 No – Dried red chili
4 No – Green chili slit
2 No – Onion chopped
1 Tbsp – Ginger garlic paste
5 No – Tomato chopped
Salt to taste
1 ½ Tbsp – Coriander powder
1 ½ Tsp – Red chilli powder
1 Tsp – Cumin Powder
½ Tsp – Turmeric powder
Water as required
15-20 no 2 Tbsp – Fresh coriander sprigschopped
1 Cup – Green peas
2 Tbsp – Ghee
¼ Tsp – Lemon juice
Method:-
1. Add the cauliflower florets to a hand mincer and mince until it reaches a keema-like texture.
2. Place a kadai on medium flame and heat it well. Add oil and let it heat up.
3. Add bay leaf, cinnamon stick, green cardamom, black peppercorns, cumin seeds, dried red chilli, and slit green chillies. Sauté until aromatic.
4. Now add chopped onions and sauté until they turn brown.
5. Now add ginger garlic paste and sauté well until the raw aroma disappears.
6. Now add chopped tomatoes, salt, and cook until they turn soft and mushy.
7. Meanwhile, blend tomatoes into a smooth puree.
8. Add the prepared tomato puree and cook until it thickens
9. Add coriander powder, red chilli powder, cumin powder, and Turmeric powder and cook well until the oil separates.
10. Now add the minced cauliflower and mix well with masala
11. Add water as required and cook, stirring occasionally.
12. Add green peas and cook until the mixture dries and the cauliflower keema is well cooked.
13. Now add chopped coriander, ghee and lemon juice.
14. Transfer to a serving bowl, garnish with chopped coriander springs and onion rings on top, and serve hot with pav.
