Hing Chutney/South Indian orange chutney/Hinga chutney🧡✨️

Hinga Chutney is a famous and tasty Konkani/South Indian chutney. It is a coconut based chutney with a good flavour of roasted hing ( asafoetida)

Ingredients
Grated fresh coconut –
⅔ cup
Dried red chillies – 2- 3 gundu, 1-2 byadgi chillies ( adjust to your spice level )
A small piece of hing (asafoetida)
Tamarind – small piece
Salt to taste

Tempering ( phanna)
2 tspn coconut oil
1 tspn mustard seeds
5-6 curry leaves

Recipe

Heat a small pan with 1 tspn oil and fry the red chillies,then add the piece of hing (asafoetida) for a few seconds. Hing will pop a little. Keep aside
In a mixer jar, add grated coconut, roasted red chillies, fried hing, tamarind piece and little water. Mix nicely. Grind all the ingredients to a smooth paste. Remove this chutney in a bowl. Add salt to taste. Add water to adjust it to medium consistency Mix well.

Now for tempering ( phanna) heat the remaining oil in a tadka pan , add mustard seeds. When they splutter, add curry leaves and fry. It will sizzle. Turn off the flame. Pour this tadka over the chutney and mix nicely.

Our Hinga chutney is ready. Serve it with idlis, dosas or appos
