Taushe Muddo (Tekkare da Adde)
Steeped in festive tradition, Taushe Muddo—known in Tulu as Tekkare da Adde—is a cherished breakfast ritual in konkani household, prepared right after or next day of Vaina Pooja and Ganpati Pooja. Crafted using the sacred cucumber offered to Gowri and the raw rice traditionally used for placing coconuts, every bite of this delicacy bridges heritage with incredible flavor. Whether you lean toward the traditional spicy version or prefer a sweet treat, wrapping these dumplings in fresh turmeric leaves infuses them with an earthy aroma that fills the entire home with comforting warmth.
3/4 cup rice rava or Bombay rava
1 cup grated cucumber (taushe)
3/4 or 1/2 cup grated fresh coconut
1 tsp grated ginger
2 chopped green chillies (for the spicy/savoury version) or jaggery if you prefer the sweet version (optional)
Salt to taste
Fresh turmeric leaves or banana leaves for wrapping
Prepare the Rava (Optional Homemade Method): Wash 1 cup of raw rice, dry it on a clean cloth for 15 minutes, and grind it while slightly moist into a fine rava consistency without adding water (you can prepare this the previous night), or use store-bought rice rava or idli rava.
Mix and Soak: In a bowl, combine the rava, grated cucumber, grated coconut, grated ginger, chopped green chillies (or jaggery), and salt. Mix everything thoroughly. If the mixture feels dry, you may add a little water, but ensure the cucumber releases its moisture so the rava can absorb it. The final mixture should be moist, neither too dry nor runny. Let it soak and soften for 10 to 15 minutes.
Wrap: Clean the fresh turmeric leaves or banana leaves. Place two turmeric leaves in a plus (+) shape, one upon another, and place a handful of the cucumber mixture at the center. Fold and close it securely from four ways.
Steam: Arrange the wrapped parcels in a steamer with the closed side facing downward (alternatively, you can use greased idli moulds). Steam for 15 to 20 minutes until done.
Serve: Serve hot with a generous dollop of ghee or drizzle of coconut oil and spicy coconut chutney
