GSB PATRADO | Traditional Konkani Patradya Paan Recipe
Today we’re making a traditional GSB dish — Patrado, made using colocasia leaves.
Colocasia leaves are known as Arbi ke patte in Hindi and Patradya Paan in Konkani. In this traditional preparation, the leaves are layered with a spiced coconut and rice masala, rolled and steamed until perfectly cooked.
This is a traditional recipe from the GSB kitchen, with simple ingredients and a delicious balance of spice, tanginess and coconut.
Ingredients:
• Colocasia Leaves / Arbi ke Patte / Patradya Paan – as required
• Freshly grated coconut – 1 cup
• Raw rice – 1 cup, soaked for minimum 1 hour
• Dried red chillies – 10, for colour
• Dried red chillies – 8, for spice
• Tamarind – 1 large lemon-sized piece
• Wet Hing – small amount
• Salt – as required
If using hing powder instead of wet hing, use not more than 1 tsp.
